Ingredients
- 1 tbsp olive oil
- 1 cup sliced shiitake caps
- 1 clove garlic (thinly sliced)
- 2 cups chopped bok choy (1 1/2 inch pieces)
- 1 cup pineapple chunks
- 2 tsp low-sodium tamari or soy sauce
- 1/4 cup torn cilantro leaves
Directions
Heat olive oil in a large skillet.
Add sliced shiitake mushroom caps and saute until they begin to brown, about 4 minutes.
Add garlic and cook, stirring until it becomes fragrant, about 30 seconds.
Add bok choy and cook for 3 minutes.
Add pineapple chunks and tamari or soy sauce and cook until everything is hot, about 2 minutes.
Add cilantro leaves before serving.
Makes 2 servings.
